Chicken Gyro Recipe

Chicken Gyros are made by marinating tender chicken tenders in a yogurt-based mixture spiced with garlic, lemon, oregano, paprika, cumin, coriander, and optional cayenne. The chicken is pan-seared or grilled to develop a browned exterior while remaining juicy. Served inside warm pita bread with tzatziki sauce, fresh tomato, cucumber, green pepper, red onion, and kalamata olives, the gyros deliver a combination of tangy, herby, and fresh flavors.

Description

The marinade consists of Greek yogurt, lemon juice, olive oil, red wine vinegar, garlic, and Mediterranean spices, which tenderize the chicken and infuse it with layered flavor. After marinating, the chicken tenders are cooked on medium-high heat either in a skillet or on a grill, achieving a well-browned texture without drying out. The warm pita acts as a soft wrap, filled with the cooked chicken and traditional accompaniments such as creamy tzatziki, slices of tomato, cucumber, green bell pepper, and sweet red onion, plus briny kalamata olives. This combination provides a balance of creamy, citrusy, herbaceous, and crisp elements. The recipe allows preparation ahead by marinating chicken up to a day early, with stove or oven cooking options and instructions for proper storage and reheating of leftovers to maintain freshness and food safety.

Ingredients

Servings

For the Chicken Gyro Marinade

  • 1 cup yogurt whole milk preferred, plain, Greek
  • 1 lemon juiced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 3 garlic minced, cloves
  • 1 tablespoon oregano
  • 1 teaspoon paprika sweet
  • 1 teaspoon cumin ground
  • 1 teaspoon ground coriander
  • 1 pinch cayenne pepper (optional)
  • kosher salt
  • black pepper

For Serving

  • 1 1/2 pounds chicken tenderloin
  • 1 tablespoon extra virgin olive oil
  • pita bread
  • tzatziki sauce
  • 1 tomato sliced, large
  • 1 cucumber sliced
  • 1 green bell pepper cored and sliced
  • 1 onion sliced into half moons, small; red variety
  • kalamata olives pitted

Instructions

  1. Marinate the chicken. In a large mixing bowl, mix together the marinade ingredients until well combined. Season with salt and pepper to taste. Add the chicken tenders and mix, ensuring each piece of chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or overnight.) Meanwhile, prep the gyro fixings.
  2. Cook the chicken. Heat extra virgin olive oil in a non-stick skillet over medium-high until shimmering but not smoking. Add the chicken tenders to the pan, shaking off any excess marinade. Cook on one side undisturbed until well-browned, about 5 minutes. Using tongs, turn the chicken over and cook on the other side for another 5 minutes or until the chicken is done.
  3. Assemble the chicken gyros. Warm up some pita over a medium gas burner or a hot, dry skillet. Spread the Tzatziki sauce on top, then add chicken (about 2 to 3 tenders) and top with tomato, cucumber, green pepper, red onion and olives as you like. Wrap the pita up and enjoy!

Notes

  • Marinate the chicken up to 24 hours ahead for well-developed flavor and tender texture; store refrigerated in an airtight container.
  • Cook chicken until internal temperature reaches 165°F for food safety; pan-searing takes about 10 minutes total, grilling time is similar.
  • Alternatively bake chicken at 375°F on a parchment-lined sheet for approximately 20 minutes until done.
  • Store leftover chicken and toppings separately in airtight containers in the refrigerator for up to 4 days; store pita at room temperature.
  • Reheat chicken gently before assembling fresh gyros to maintain juiciness and texture.
