Chicken Kafta
Description
The recipe begins by mixing ground chicken with finely chopped parsley and yellow onion, pressed garlic, cinnamon, salt, and black pepper, creating a sticky and well-seasoned mix. The mixture is then shaped into oblong patties about one inch thick, which can be skewered or cooked as is. The kafta is grilled on a medium-high heat grill or grill pan, ensuring even cooking with 4-5 minutes per side until fully cooked.
The cinnamon adds a warm, slightly sweet aromatic note, which balances the savory flavors of chicken and herbs. The grilling imparts a slight char while keeping the interior juicy. These kafta are versatile and can be served with various sides or in wraps or salads.
Leftovers store well in the refrigerator for a few days, and the kafta can be made ahead and frozen before cooking to save time. Thawing in the refrigerator overnight is recommended to maintain texture and ensure even cooking.
Ingredients
- 1 pound ground chicken
- ¼ cup parsley finely chopped
- ½ yellow onion finely chopped, small
- 1 garlic pressed, clove
- 2 teaspoons cinnamon
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Place the ground chicken, parsley, onions, garlic and spices all in a large bowl. Use your hands to combine until the mixture is well blended. It will feel a little sticky, but that's fine.
- Form the Kafta into an oblong shape about 1 inch in thickness. You can form them on a wooden skewer or without.
- Grease the grates of a gas grill or indoor grill pan, and preheat it to medium high heat. When heated through, transfer the kafta to the grill. Grill for 4-5 minutes per side, until the chicken is fully cooked.
- Serve hot off the grill with your choice of side.
Notes
- Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
- You can prepare kafta ahead and freeze for up to 3 months; thaw in the fridge overnight before grilling.
