Ingredients
For the chicken kelaguen
- 4 chicken thigh with skin, boneless
- ½ lb coconut coarsely grated, fresh
- 3 scallions , finely chopped
- 4 red chili pepper and/or
- 4 green chili pepper and/or
- ½ cup lemon juice fresh
- 4 tortilla heated on the grill, small
For the finadene sauce
- lemon juice of 2 and zest
- 3 tablespoons white vinegar
- ½ cup soy sauce
- 3 scallions , chopped
- 3 red hot pepper and/or
- 3 green hot pepper and/or
- cherry tomatoes sliced, a few
Instructions
Chicken kelaguen
- Marinate the chicken in half the lemon juice and scallion.
- Grill the chicken thighs on the barbecue for about 8 minutes on each side.
- Remove the skin and cut into small pieces.
- Mix with coconut, onions, lemon juice, and chilies.
- Add salt and pepper
- Serve with tortillas.
Finadene sauce
- 12 hours (or more) before eating the sauce, combine all ingredients and refrigerate.
