Chicken Lo Mein

This Chicken Lo Mein Recipe is made with tender pieces of chicken, soft lo mein noodles, and crisp veggies tossed in a simple sauce. Ready in less than 20 minutes, it's the perfect alternative to ordering takeout!

Ingredients
- 1 cup carrots sliced thinly and vertically
- 1 cup red bell peppers sliced thinly and vertically
- 1 cup Snow peas
- 2 cups baby bell mushrooms sliced
- 2 cups broccoli florets
- 1 pound Cooked Chicken Breast depending on preference
- 8 ounces cooked lo mein noodles
- 3 cloves garlic minced
- 1/3 cup chicken broth
- 4 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 teaspoons sesame oil

Instructions
- Cut the cooked chicken into bite-size pieces and set aside.
- Add the brown sugar, sesame oil, soy sauce and chicken broth to a small bowl and whisk to combine making sure the sugar is dissolved. (Or, you can add the ingredients to a mason jar, tighten the lid and shake to combine.)
- In a medium pan, heat a few tablespoons of sesame oil over medium-high heat. Add the mushrooms and cook until slightly browned. Remove and set aside.
- Add additional oil if necessary and then add the garlic and remaining vegetables and sauté until crisp tender. (You may need to add a splash extra of broth or water to assist with cooking/steaming the veggies.)
- Once cooked through, add the mushrooms and chicken back to the pan. Add the cooked noodles to the same pan.
- Pour the sauce over the top and use a tongs to mix together.
- Serve immediately!
Notes
- If you choose to cook the chicken yourself, either pat dry and grill or cook in a frying pan over medium high heat with a Tablespoon of cooking oil until it reaches 165 degrees. Remove from heat and set aside.
