Ingredients
- 3 tablespoons soy sauce
- 3 tablespoons oyster sauce
- 1 teaspoon sesame oil
- 8 ounces Lo Mein Noodles
- 2 tablespoons olive oil divided
- 1 pound boneless skinless chicken breast sliced into small strips
- ¼ cup onion chopped
- 2 cloves garlic minced
- 1 cup Snow peas
- 1 cup shredded carrots
- 1 red bell pepper sliced into strips
- 8 ounces mushrooms sliced
- green onion sliced

Instructions
- Whisk together the soy sauce, oyster sauce, and sesame oil in a small dish. Set aside.
- Cook the noodles according to package directions.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add in the chicken and season with salt and pepper. Cook for 5-7 minutes until browned on all sides and cooked through. Transfer the chicken to a clean plate.
- Add in another tablespoon of olive oil and cook the onion for a couple minutes until soft. Stir in the snow peas, carrots, bell pepper, and mushrooms. Sauté for 3-4 minutes until they begin to soften. Add in the garlic and cook for another minute.
- Add in the noodles, chicken, and sauce. Give the mixture a good stir and cook for a minute or two until the sauce thickens.
- Sprinkle with sliced green onion and serve.
