Chicken Marbella Ottolenghi-style

Chicken Marbella Ottolenghi-style is a marinated roasted chicken dish featuring bone-in thighs flavored with garlic, cilantro, olives, capers, and sweet Medjool dates. The chicken is marinated in a blend of vinegar, olive oil, and herbs, then baked alongside wedges of sweet potatoes. A drizzle of red wine and date molasses adds depth and sweetness, delivering a flavorful balance of savory, tart, and sweet.

Description

This recipe involves marinating chicken thighs in a mixture of garlic, fresh cilantro, red wine vinegar, olive oil, olives, capers, and quartered Medjool dates, seasoned with salt, pepper, and bay leaves. The marinade helps tenderize the chicken and infuses it with a complex savory and fruity flavor profile. After marinating for at least two hours or up to two days, the chicken and marinade, along with sweet potato wedges, are arranged on a baking sheet and roasted in the oven.

Before baking, a mix of red wine and date molasses is whisked and poured over the chicken and sweet potatoes. This adds a subtle sweetness and depth that enhances the natural flavors. The dish cooks until the chicken is tender and the sweet potatoes are roasted and slightly caramelized at the edges. The resulting dish is a layered combination of textures and tastes, with tender and juicy chicken, sweet and soft potatoes, and bursts of salty olives and capers.

Serving this chicken with its sweet and savory components makes for a satisfying main course. The approach suits home cooks who can prepare the marinade ahead for convenience and prefer dishes that combine fruity sweetness with savory herbs and spices.

Ingredients

Servings
  • 6 chicken thigh skin on and bone-in, scored a few times, or breast or drumstick
  • 4 garlic crushed, cloves
  • ¾ cup cilantro chopped plus more for serving, fresh leaves
  • 3 tablespoon red wine vinegar
  • 3 tablespoon olive oil
  • 1 cup green olives pitted
  • 5 tablespoon capers plus 2 tablespoon of their brine
  • 1 cup Medjool dates pitted and quartered lengthwise (equal to 7 individual dates or 120g, Natural Delights brand
  • 2 bay leaf
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup red wine 120ml, dry
  • 2 sweet potato cut into wedges, large or 4 small
  • 2 TBs date molasses can be replaced with pomegranate molasses, regular molasses or maple syrup

Instructions

  1. Prepare a large baking pan or baking sheet by covering it with parchment paper.
  2. If you have time to marinate the chicken, place chicken pieces in a large bowl and add the garlic, cilantro, vinegar, oil, olives, capers, Medjool dates, bay leaves, 1 teaspoon salt and ½ teaspoon black pepper. If you are cooking the chicken straightaway, then rub the chicken with the salt and pepper prior to placing it in the marinade of garlic, cilantro, vinegar, oil, olives, capers, dates and bay leaves. Stir everything to combine, cover the bowl and let the chicken marinate for at least 2 hours, and up to two days.
  3. Preheat the oven to 400°F.
  4. Spread out the sweet potatoes along the sides of the baking sheet. Arrange chicken thighs, along with all the marinade ingredients, letting it overlap with the sweet potatoes. Whisk together the wine and molasses and pour over the meat. Drizzle sweet potatoes with 3-4 TBs of olive oil and sprinkle generously with 1 teaspoon salt and ½ teaspoon pepper.
  5. Place Ottolenghi Chicken Marbella with dates in the oven and cook for 50 minutes, basting two or three times, until the meat is golden brown on top and cooked through.
  6. Remove tray from the oven, transfer chicken, sweet potatoes and everything else to a large platter, sprinkle with some fresh cilantro, and serve.
