Chicken Massaman Curry
Description
This Chicken Massaman Curry begins by sautéing minced garlic and diced onion in olive oil until the garlic is lightly browned to build depth. Chicken pieces are then browned alongside massaman curry paste and fish sauce, releasing the curry's aromatic base. The addition of full-fat canned coconut milk creates a creamy sauce that envelops chunks of peeled potatoes and sliced carrots, which cook slowly in the simmering curry.
The curry is seasoned with salt and carefully simmered for about one hour, allowing the flavors to meld and the vegetables to become tender. The finished curry is served over rice and garnished with a handful of cashews, adding a contrasting texture.
The massaman curry paste contributes a moderate heat level that can be adjusted, and using full-fat coconut milk rather than lite prevents the sauce from thinning out. This dish provides a hearty meal combining protein, starch, and vegetables in a flavorful sauce.
Ingredients
- 2 teaspoons olive oil
- 1/2 onion in large dice, large
- 5 cloves garlic peeled and minced
- 1 ½ pounds chicken in 1-inch chunks
- 3-4 tablespoons massaman curry paste
- 3 tablespoons fish sauce
- 2-15 ounce coconut milk full-fat, canned
- 4 potato peeled and in large dice
- 2 carrot peeled and in slices
- cashews handful
- salt
Instructions
- In a large, deep skillet, sauté garlic and onion in olive oil until garlic is light brown, about 5 minutes.
- Add meat, curry, and fish sauce. Cook, stirring, until meat is browned and curry is fragrant, about 10-15 minutes.
- Add the coconut milk, potatoes, and carrots.
- Season with salt to taste.
- Simmer, stirring occasionally, for about 1 hour.
- Serve over rice topped with cashews.
Notes
- Adjust the amount of massaman curry paste to control heat: start with 2 tablespoons for milder curry or increase to taste.
- Using full-fat canned coconut milk ensures the sauce is creamy and not watery; lite coconut milk may thin the sauce.
