Chicken Meatball Soup
Description
This soup begins by gently sautéing a mix of diced onion, carrots, zucchini, and butternut squash in olive oil and butter, softening the vegetables and building a flavorful base. Garlic is added briefly to release its aroma before liquids are poured in. Chicken broth and diced tomatoes with Italian seasonings and bay leaves contribute depth and herbaceous notes.
Pearl barley is added to provide a chewy texture and make the soup more substantial. Meanwhile, Italian chicken sausage meat is removed from casings and gently rolled into meatballs by hand. These meatballs cook directly in the simmering soup, absorbing flavor and releasing juices, enriching the broth.
The soup simmers for 30 to 45 minutes, enough time for the chicken to be fully cooked and the barley to become tender. Serving garnished with grated Parmesan cheese and fresh basil adds creamy and bright herbal accents that complement the warm, tomato-based soup.
Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 medium onion diced, about 1 cup
- 2 large carrot diced
- 2 cups butternut squash diced
- 2 small zucchini diced
- 3 cloves garlic minced
- 8 cups chicken broth
- 29 oz diced tomatoes two 14.5 oz cans
- 2 bay leaf
- 2 teaspoons Italian seasoning
- salt to taste
- black pepper to taste
- 1/3 cup pearl barley
- 3 Italian chicken sausage links raw
- Parmesan Cheese for garnish, optional
- basil fresh, chiffonade, for garnish, optional
Instructions
- Heat olive oil in large pot over medium heat. Saute onions, carrots, zucchini, and butternut squash for 5-6 minutes.
- Add minced garlic and cook another minute or two.
- Pour in chicken broth, diced tomatoes, seasonings and barley. Bring to a boil. Reduce heat to simmer.
- Pull meat from sausages out of casings and roll into small meatballs. Drop into simmering broth.
- Cook for 30-45 minutes or until chicken and pearl barley are completely cooked. Ladle into bowls and serve with grated parmesan and fresh basil.
