Chicken Mixed Vegetable Casserole

This chicken mixed vegetable casserole combines cooked chicken breast, seasoned frozen Normandy blend vegetables, and condensed cheddar cheese soup topped with biscuit pieces and shredded cheese. The biscuits bake on top to a golden crust, creating a hearty and creamy one-dish meal with a blend of textures and flavors.

Description

The recipe starts by cooking and draining frozen mixed vegetables to avoid excess moisture that would affect biscuit baking. Seasoned biscuit pieces are added to the chicken, vegetables, and cheddar cheese soup mixture in a baking dish. The casserole bakes until the biscuits are browned and cooked through, then topped with shredded cheese and returned to the oven briefly to melt the cheese.

The rich cheddar soup seasoning and Old Bay spice blend give depth to the casserole, while the biscuit topping provides a tender and slightly crispy contrast. This dish serves well as a comforting meal with balanced protein, vegetables, and starch in one pan.

Ingredients

Servings
  • 24 ounces frozen mixed vegetables Normandy blend
  • 1 Biscuit Pillsbury Flaky Layers, canned
  • 2 teaspoons Old Bay seasoning lower-sodium
  • 1 tablespoon garlic powder
  • 24 ounces chicken breast shredded or diced, cooked
  • 10.5 ounce condensed cheddar cheese soup canned
  • 1 cup cheese shredded

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 13x9 dish with nonstick spray, set aside.
  3. Cook the Normandy blend vegetables according to package instructions and drain well. You don't want any extra water in the casserole, it will prevent the biscuits from cooking properly.
  4. Cut the biscuits into 10 pieces each and place them inside a large food storage bag.
  5. Add the Old Bay seasoning and garlic powder to the bag and seal. Shake the bag to coat all of the biscuit pieces. Set aside.
  6. Add chicken breast, cheddar cheese soup, and Normandy blend vegetables to the baking dish. Mix to combine.
  7. Add the biscuits to the mixture.
  8. Bake for 35-38 minutes until the biscuits are browned and cooked through. Removed from the oven.
  9. Sprinkle with shredded cheese and return to oven for an additional 2-4 minutes (just until cheese is melted).
