Chicken Mushroom Spaghetti

Chicken Mushroom Spaghetti features tender chicken pieces cooked alongside mushrooms and onions in a creamy mascarpone sauce, combined with spaghetti. The use of Old Bay seasoning adds a distinctive spice note, while the wine reduction enriches the sauce, giving it complexity. The mascarpone melts smoothly into the sauce, balancing flavors and coating the pasta lightly. Basil brings freshness to the dish, making it satisfying for a comforting meal.

Description

Chicken Mushroom Spaghetti balances the hearty texture of sautéed chicken breast with the earthiness of mushrooms and the softness of caramelized onions. This dish is built on a creamy sauce formed by mascarpone cheese, which melts into a smooth coating infused with a subtle seasoning of Old Bay and the acidity from wine reduction. The cooked spaghetti pasta is tossed with the sauce and fresh basil to distribute flavors evenly. The resulting dish combines tender protein with a rich, creamy texture complemented by aromatic herbs.

The preparation involves pan-frying seasoned chicken pieces until cooked through, followed by sautéing onions and mushrooms to develop flavor and texture. Adding wine to the pan allows for deglazing and creates a slightly tangy base for the mascarpone to melt into, forming a creamy sauce without heaviness. Finishing with fresh basil and optional Parmesan enhances the aroma and provides depth.

This dish works well served on its own as a warm, filling meal. It pairs well with a light salad or steamed vegetables to balance the richness. The creamy sauce coating the spaghetti offers a smooth mouthfeel with a mild yet distinctive flavor profile from the seasoning and wine reduction.

The recipe suggests seasoning to taste after combining all ingredients, which allows adjusting salt levels. Using fresh basil just before serving helps preserve its brightness. Parmesan is optional for added savoriness, which can be sprinkled as desired.

Ingredients

Servings
  • ½ lb spaghetti uncooked
  • 1 lb chicken breast or thighs, cut into medium pieces
  • 1 lb mushrooms sliced
  • ½ onion large, sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 6 oz. mascarpone cheese about 6 tbsp
  • ½ tsp Old Bay seasoning
  • 1 cup semi-sweet wine
  • 2 tbsp basil chopped
  • salt to taste

Instructions

  1. Bring a large pot of water to a boil and cook the pasta according to the package instructions. Drain, rinse with cold water, and set aside. Meanwhile, sprinkle the chicken with Old Bay Seasoning and fry it in olive oil, on medium heat, for 4-5 minutes on each side, until just cooked-through.
  2. Remove the chicken from the pan and set aside. To the same pan, add the butter and onion, and cook for 5 minutes, until the onion softens and starts to turn a golden color.
  3. Add mushrooms and a little salt, and cook for another 5 minutes. After that, add the wine and simmer until it is reduced by half, about 4-5 minutes.
  4. Add the mascarpone and the reserved chicken, stir, and keep cooking for another 1-2 minutes, until the cheese has melted and heated through. Taste the sauce, and add more salt, if necessary.
  5. Add the spaghetti and basil, and mix everything well. Serve immediately. Sprinkle some Parmesan cheese on top, if desired.

Notes

  • Adjust salt after combining sauce and pasta to balance flavors.
  • Fresh basil added at the end preserves its aroma and color.
  • Optional Parmesan cheese can be sprinkled on top before serving for extra savoriness.
