Description

  • 1 tortilla chips salted, in bag
  • 2 cups chicken leftover chicken or rotisserie work well, shredded
  • 14.5 ounce black beans canned, drained and rinsed
  • 1/2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 2 cups cheese shredded
  • 1 cup Pico de Gallo
  • 2 avocado cubed, fresh
  • 1/2 cup sour cream
  • 2 jalapeño sliced
  • 1 can black olives sliced
  • lime for garnish if desired, wedges and fresh
  • cilantro for garnish if desired, wedges and fresh

Instructions

  1. Preheat the oven to 350° degrees F.
  2. In a mixing bowl, combine the beans, chili powder, cumin, and pepper. Set aside.
  3. Spread a bag of tortilla chips over the bottom of a cookie sheet or any large oven safe pan.
  4. Spread the chicken around the chips. Spread prepared beans over the chicken.
  5. Top with the shredded cheese and place in the oven until the cheese is melted. Depending on the type of cheese, this could take between 5-10 minutes. Keep a close eye on it.
  6. Remove, add the remaining toppings and serve immediately. Serve with lime wedges and a sprinkle of fresh chopped cilantro.
