Chicken Parmesan Casserole
Description
This casserole begins with seasoning a baking dish with olive oil, garlic, and crushed red pepper flakes to infuse flavor into the chicken and sauce. Chicken breasts are arranged in the dish and covered with marinara sauce, fresh basil, and a combination of mozzarella and Parmesan cheeses divided into layers to ensure melting and flavor balance. Crushed garlic croutons are sprinkled on top before finishing with more cheese, which crisps up during baking. The dish bakes at moderate heat until the chicken is cooked through and the top is golden brown.
The textures range from tender, juicy chicken to a rich tomato sauce base, fresh herbal notes from basil, melted cheeses, and a crunchy topping from the seasoned croutons. It can be served as a main entrée, paired with pasta or a side salad.
Using pre-sliced chicken breasts helps them cook more evenly and faster. Covering the casserole with foil partway during baking prevents over-browning of the cheese topping.
Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic crushed and finely chopped
- 1/4 /4 teaspoon red pepper flakes or to taste, crushed
- 6 skinless boneless chicken breast halves
- 2 cups marinara sauce
- 1/4 /4 cup basil chopped, fresh
- 1 (8 ounce) package mozzarella cheese shredded, divided
- 1/2 /2 cup Parmesan Cheese divided, grated
- 1 (5 ounce) package crouton garlic flavored
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
- Arrange the chicken breasts in bottom of the baking dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons on top of the casserole, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
- Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. Cover the casserole with foil towards the end of baking time of the top starts to get too brown.
Notes
- Use chicken breasts cut in half lengthwise for quicker, even cooking.
- Applying foil near the end of baking helps prevent over-browning on top.
- Garlic-flavored croutons add a crunchy, aromatic crust to the casserole.
- Costco chicken breasts are a suitable choice for this recipe.
