Juicy chicken parmesan meatballs in rich tomato sauce baked with mozzarella until melty and delicious is a great, easy dinner recipe.

Ingredients
- 1 kg (2lb) chicken mince / ground chicken
- 1 cup grated Parmesan cheese
- 1 cup fresh breadcrumbs
- 2 eggs beaten
- 2 tsp salt
- 2 tsp black pepper
- 2 tsp dried oregano
- 2 tsp Italian seasoning
- 1 tsp chilli flakes / red pepper flakes
- 1 tsp garlic powder
- 6 cups tomato sauce
- 200 g (6.5oz) mozzarella cheese
- fresh basil
Instructions
- Preheat the oven to 200°C/390°F.
- Combine the chicken with the breadcrumbs, beaten egg, parmesan and seasonings in a large bowl then mix well until combined.
- With damp hands, form the mixture into golf-ball sized meatballs.
- Heat a large skillet or non-stick frying pan over medium-high heat.
- Add a splash of olive oil then add the meatballs and brown for a few minutes per side. You could also bake the meatballs on a parchment paper lined baking sheet until golden brown.
- Pour the tomato sauce into the pan with the meatballs then top with mozzarella. Place in a hot oven and bake for 10-15 minutes until the cheese is melted and the meatballs are cooked through.
- Remove from the oven and sprinkle over fresh basil then serve.
