Chicken Parmesan meatballs

Juicy chicken parmesan meatballs in rich tomato sauce baked with mozzarella until melty and delicious is a great, easy dinner recipe.

Ingredients

  • 1 kg (2lb) chicken mince / ground chicken
  • 1 cup grated Parmesan cheese
  • 1 cup fresh breadcrumbs
  • 2 eggs beaten
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp dried oregano
  • 2 tsp Italian seasoning
  • 1 tsp chilli flakes / red pepper flakes
  • 1 tsp garlic powder
  • 6 cups tomato sauce
  • 200 g (6.5oz) mozzarella cheese
  • fresh basil

Instructions

  1. Preheat the oven to 200°C/390°F.
  2. Combine the chicken with the breadcrumbs, beaten egg, parmesan and seasonings in a large bowl then mix well until combined.
  3. With damp hands, form the mixture into golf-ball sized meatballs.
  4. Heat a large skillet or non-stick frying pan over medium-high heat.
  5. Add a splash of olive oil then add the meatballs and brown for a few minutes per side. You could also bake the meatballs on a parchment paper lined baking sheet until golden brown.
  6. Pour the tomato sauce into the pan with the meatballs then top with mozzarella. Place in a hot oven and bake for 10-15 minutes until the cheese is melted and the meatballs are cooked through. 
  7. Remove from the oven and sprinkle over fresh basil then serve.
