Chicken Parmesan Meatballs for #Appetizer Week

Italian-inspired Chicken Parmesan Meatballs can be served as a stand alone appetizer with extra marinara sauce, or in sandwiches or sliders.

Ingredients

  • 1 lb chicken sausage removed from casings
  • ¾ cup breadcrumbs Italian style
  • 1 cup Parmesan Cheese fresh grated
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1-½ teaspoons Italian seasoning dried
  • 1/2 teaspoon crushed red pepper
  • 2 tablespoons parsley chopped, fresh
  • ½ tsp black pepper fresh cracked
  • 1 egg lightly beaten, large
  • 1 cup marinara sauce
  • 1 cup fresh mozzarella sliced into small thin slices

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the first 10 ingredients. Combine well but don't over mix. Roll chicken mixture into 1" meatballs and place onto baking sheet. Bake for 16-18 minutes until lightly browned.
  3. Spoon about one tablespoon marinara sauce over each meatball. Place a small thin slice of mozzarella on top of each meatball.
  4. Return to oven and cook for about 5 minutes or until cheese is melted.
