Chicken Parmesan Sub

Chicken Parmesan Subs are a delicious and easy-to-make meal. Crispy chicken breasts, rich marinara sauce, and melted mozzarella cheese come together in a warm sub roll. Perfect for a satisfying lunch or dinner!

  • 4 chicken breast boneless and skinless, pounded to ¼ inch thickness
  • salt to taste
  • black pepper to taste
  • 1 cup all-purpose flour for dredging
  • 2 large egg
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 4 tablespoons olive oil
  • 4 sub rolls split lengthwise
  • 1 cup marinara sauce plus more for dipping
  • 8 lices mozzarella cheese
  • ¼ cup Parmesan Cheese grated
  • parsley for garnish, fresh

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper. Dredge each breast in flour, dip into beaten eggs, and coat with a mixture of panko breadcrumbs, garlic powder, onion powder, and Italian herbs.
  3. Heat olive oil in a large skillet over medium-high heat. Fry the chicken until golden brown on both sides and cooked through, about 4 minutes per side. Set aside on a paper towel-lined plate.
  4. Place the sub rolls on a baking sheet. Spread a thin layer of marinara sauce on the bottom half of each roll. Place a fried chicken breast on top of the sauce on each roll. Spoon more marinara sauce over the chicken. Lay two slices of mozzarella cheese over the sauce on each sub, and sprinkle with Parmesan cheese.
  5. Transfer the baking sheet to the preheated oven and bake until the cheese is melted and bubbly, about 5-10 minutes.
  6. Garnish with parsley and serve hot with additional marinara sauce on the side for dipping.

Notes

  • Pound the chicken breasts to ¼ inch thickness for even cooking.
  • Use panko breadcrumbs for extra crunch.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheat subs in a 350°F (175°C) oven for about 10 minutes to keep them crispy.
  • Freeze assembled subs for up to 1 month; thaw in the refrigerator before reheating.
