Chicken Pesto Tortellini
Description
This Chicken Pesto Tortellini features tender cheese tortellini cooked according to package directions and drained. Chicken breast is cut into small pieces and sautéed in olive oil with seasoning until browned and just cooked through. Halved grape tomatoes are combined with the cooked tortellini and chicken in a large bowl.
Generous basil pesto is stirred in to coat the pasta, chicken, and tomatoes, infusing the dish with an herbaceous, aromatic flavor. Freshly chopped basil is added for brightness, while salt and black pepper adjust seasoning. Optional garnishes include additional fresh basil leaves and freshly grated Parmesan cheese, which enhance the flavor and visual appeal.

Ingredients
- 12 oz cheese tortellini
- 1 tablespoon olive oil
- 12 oz chicken breast cut into bite size pieces, boneless, skinless
- 1/2 cup basil pesto
- 1 1/2 cups grape tomato halved
- 1/4 cup basil chopped
- salt to taste, Kosher salt
- black pepper to taste, Kosher salt
- basil optional, for garnish, fresh basil
- Parmesan Cheese optional, for garnish, fresh basil
Instructions
- Bring a large pot of salted water to a boil. Cook tortellini according to package instructions. When finished cooking, drain the tortellini in a colander.
- Meanwhile, cook the chicken. In a large skillet, heat the olive oil over medium high heat. Add the chicken to the pan and season to taste with salt and pepper. Cook, stirring occasionally, until chicken is browned and just cooked through, 4-5 minutes.
- Pour the tortellini in a large bowl. Add cooked chicken pieces and tomatoes. Gently stir in the basil pesto, stirring until the tortellini, chicken, and tomatoes are well coated with the pesto. Add the freshly chopped basil and season with salt and black pepper, to taste. Garnish with fresh basil and parmesan cheese, if desired.
Notes
- Omit chicken to make a vegetarian version of this dish.
