Chicken Quesadilla
Description
The preparation starts by whisking mayonnaise with taco seasoning, garlic salt with parsley, and hot sauce to create a zesty spread. This mixture is spread on one side of a tortilla, topped with seasoned shredded chicken and Mexican cheese, then covered with a second sauced tortilla. Microwaving briefly warms the filling and softens the cheese, after which the quesadilla is cooked in a hot skillet to achieve a crispy crust and melted interior.
This method provides a creamy and spicy flavor profile, balancing the richness of the mayonnaise-based sauce with the savory chicken and cheese. The quesadilla is versatile and can be served as a meal or snack, with any leftover sauce doubling as a dipping condiment for extra flavor.
The recipe supports make-ahead preparation by assembling and freezing quesadillas. To reheat, microwave the frozen quesadilla briefly, then finish crisping in a pan. Leftovers keep well refrigerated for up to four days and can be reheated in the microwave or skillet.
Ingredients
- 1 cup mayonnaise
- ½ teaspoon taco seasoning
- ¼ teaspoon garlic salt with parsley flakes
- 2 teaspoons hot sauce
- 6 tortillas
- 2 cups Mexican cheese
- 2 cups chicken seasoned, shredded
Instructions
- Whisk mayo, taco seasoning, garlic salt, and hot sauce.
- Spread the mayo mixture on one side of a tortilla. Sprinkle the desired amount of shredded chicken on top, then some cheese. Add sauce to a second tortilla and place on top.
- Heat in the microwave for about 20 seconds, then put in a hot pan on the stove, until nice and crisp. If you have sauce left over, use it for dipping!
Notes
- Assemble quesadillas and freeze flat on a cookie sheet before transferring to a bag for up to 2 months storage.
- To reheat from frozen, microwave for 30-60 seconds, then crisp in a nonstick pan until cheese melts and tortillas are golden.
- Store leftovers in an airtight container in the refrigerator for up to 4 days, reheating as needed.
