Chicken Quesadilla

This Chicken Quesadilla recipe layers seasoned shredded chicken and melted Mexican cheese between tortillas spread with a flavorful mayonnaise-based sauce. Initial microwaving softens the cheese, followed by pan crisping for a golden, crunchy exterior. The quesadilla can be easily frozen after assembly and reheated, making it a practical option for quick meals or snacks with a creamy dipping sauce.

Description

The preparation starts by whisking mayonnaise with taco seasoning, garlic salt with parsley, and hot sauce to create a zesty spread. This mixture is spread on one side of a tortilla, topped with seasoned shredded chicken and Mexican cheese, then covered with a second sauced tortilla. Microwaving briefly warms the filling and softens the cheese, after which the quesadilla is cooked in a hot skillet to achieve a crispy crust and melted interior.

This method provides a creamy and spicy flavor profile, balancing the richness of the mayonnaise-based sauce with the savory chicken and cheese. The quesadilla is versatile and can be served as a meal or snack, with any leftover sauce doubling as a dipping condiment for extra flavor.

The recipe supports make-ahead preparation by assembling and freezing quesadillas. To reheat, microwave the frozen quesadilla briefly, then finish crisping in a pan. Leftovers keep well refrigerated for up to four days and can be reheated in the microwave or skillet.
