Description
Chicken Rice Mushroom Soup starts by sautéing onions in butter, then adding flour to create a light roux before introducing chicken broth and water. The soup is enriched with chopped carrot, garlic, celery, and a blend of three types of rice along with boneless skinless chicken thighs. The mixture simmers covered to tenderize the chicken and cook the rice.
Shiitake mushrooms added later lend an earthy depth, and after shredding the chicken, sour cream is stirred in to add creaminess. The broth remains clear yet flavorful, and the variety of rices contributes a pleasant, slightly chewy texture contrasted by the tender chicken and mushrooms.
This soup serves well as a substantial meal on its own or alongside a simple green salad. It can be adjusted with additional water if it becomes too thick and seasoned further to taste.
Ingredients
- 1 tbsp butter
- 1 onion small
- 1 tbsp flour
- 6 cups chicken broth Swanson, less-sodium
- 3 cups water
- 2/3 cup carrot chopped
- 3 garlic cloves
- 2 celery stalks
- 14 oz boneless (skinless chicken thighs)
- 4.5 oz long grain rice I used Carolina, combo
- 4.5 oz wild rice I used Carolina, combo
- 1/2 cup brown rice
- 4 oz shiitake mushrooms (sliced)
- 2 tbsp sour cream light
- salt to taste
- black pepper to taste
Instructions
- Melt butter in a large pot on medium heat, add onion and saute until soft but not browned, about 3-4 minutes.
- Add flour and saute another minute.
- Add chicken broth, water, carrots, garlic, celery, brown rice and chicken thighs, cover and simmer 20 minutes.
- Add wild rice mix along with it's seasoning packet, long grain rice and mushrooms and simmer on low, covered 25 minutes, stirring occasionally.
- Remove chicken from pot and shred with two forks, return to pot, add sour cream and more water if too thick, adjust salt and pepper to taste if needed and serve.
