  • 3 cups chicken shredded, cooked
  • 2 celery diced, ribs
  • 3 green onions (sliced or 2 Tablespoons of onion)
  • 1 cup grapes halved, seedless
  • 1/2 cup almonds sliced
  • 2/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 to 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Start by preparing the chicken. If using a rotisserie chicken, shred or chop the chicken into bite-size pieces. If cooking the chicken, poach the chicken until tender. The important tip is to make sure to season the chicken! Add a generous amount of salt to the chicken before adding it to the other ingredients.
  2. Chop the celery and green onion. Cut the seedless grapes in half. Use sliced almonds or chop whole almonds.
  3. Make the dressing by mixing together mayonnaise, dijon mustard, salt, and pepper.
  4. Toss all of the ingredients into a large bowl. Add the dressing and toss until evenly coated. Taste for seasoning. The chicken will soak up the dressing and become even more flavorful as it chills.
  5. Cover and chill in the refrigerator until ready to serve. Serve on top of croissants, lettuce leaf, French bread, or crackers.
