Description

  • 1 tablespoon olive oil
  • 4 chicken breast I prefer to use thin cut breasts, boneless skinless
  • 2 teaspoons taco seasoning
  • 1 cup cheddar cheese shredded
  • 3/4 cup black beans rinsed and drained, canned
  • 1/3 cup red bell pepper diced
  • 1/3 cup corn kernels thawed if frozen
  • 2 tablespoons cilantro chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat the oil in a large oven safe pan over medium high heat. Preheat the oven to 400 degrees F.
  2. Season the chicken on both sides with the taco seasoning, salt and pepper.
  3. Cook the chicken for 4-5 minutes on each side or until cooked through. The time may vary depending on the thickness of your chicken.
  4. Sprinkle the cheese evenly over the chicken breasts. Add the beans, red bell pepper and corn on top of the cheese.
  5. Bake for 5 minutes or until cheese is melted. Sprinkle with cilantro and serve.
