Chicken Satay Skewers with Spicy Peanut Sauce
Description
The chicken strips soak in a marinade of coconut milk, soy sauce, yellow and red curry powders, and honey for an hour to absorb a mildly sweet and aromatic curry flavor. The chicken is then threaded onto skewers and cooked over medium heat on a grill or in the oven until cooked through yet juicy.
The accompanying peanut sauce is prepared from the marinade's reserved coconut milk, creamy peanut butter, soy sauce, Sriracha or red pepper flakes, fish sauce, lime juice, and honey. It provides a creamy, tangy, spicy complement that pairs with the subtle sweetness and firm texture of the grilled chicken skewers.
The skewers can be served warm with the peanut dipping sauce for an appetizer or main dish. Various alternative sauces like tzatziki, chimichurri, or honey mustard are suggested for different flavor profiles.
Notes provide ideas for sauce variations, nut-free peanut butter substitutes, and additional sauces to complement the skewers, allowing flavor customization to taste or dietary needs.
