Chicken Satay with Peanut Sauce

Chicken Satay with Peanut Sauce combines marinated chicken breast cubes with a blend of lemongrass, turmeric, and ground coriander for deep flavor. Skewered and grilled quickly, the chicken develops a slightly charred surface while remaining tender inside. The smooth peanut sauce, made with peanut butter, soy sauce, garlic, and lime, adds a creamy, tangy contrast. It’s a classic pairing where the bold marinade and rich sauce complement each other well, making the satay a flavorful option for appetizers or casual meals.

Description

Chicken Satay with Peanut Sauce starts with skewered chicken breast cubes marinated in a mixture featuring dried lemongrass, yellow onion, garlic, fresh ginger, turmeric, coriander, cumin, dark soy sauce, fish sauce, brown sugar, vegetable oil, and a touch of sriracha. This combination creates a balance of aromatic herbs and spices with savory and slightly sweet elements. The chicken is grilled for only a few minutes per side, allowing a quick sear to lock in juices while preserving tenderness.

The peanut sauce is made separately by blending smooth peanut butter with lite soy sauce, fresh garlic and ginger, sesame oil, sriracha, and fresh lime juice and zest. This results in a creamy, slightly spicy, and tangy sauce that pairs well with grilled chicken skewers. Together, the dish offers contrasting textures and robust, layered flavors.

The skewers can be served with chopped cilantro and crushed peanuts for garnish, adding fresh herbal notes and additional crunch. This recipe works well as a finger food or served with rice or fresh salad for a light meal. The peanut sauce also makes a convenient dip for extra flavor with each bite.

For best results, marinate the chicken for at least 30 minutes, preferably overnight, to allow the flavors to penetrate fully. Soaking wooden skewers in water beforehand prevents burning during grilling. The peanut sauce ingredients blend smoothly in a food processor for easy preparation. These steps ensure flavorful, tender chicken with a creamy finish.
