Chicken satay with peanut sauce
Description
This Chicken satay uses a marinade rich in Southeast Asian flavors including lemongrass and turmeric, imparting bright, aromatic notes along with a touch of heat from cayenne pepper. The meat is cut into chunks and allowed to soak in this marinade for at least an hour, enabling the flavors to deepen and tenderize the chicken.
The peanut sauce complements the grilled chicken with its blend of creamy peanut butter, savory fish sauce, tangy tamarind, and toasted sesame oil, balancing the marinade's spice with sweetness and acidity. Grilling the skewered chicken produces lightly charred edges and a juicy interior.

Ingredients
For the marinade
- 1 tablespoon lemongrass minced
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon fish sauce
- 1 tablespoon ginger minced/grated
- 1 tablespoon lime juice
- 2 cloves garlic crushed/grated
- ½ teaspoon Turmeric
- 1 dash cayenne pepper or more to taste
- 1 lb chicken 450g, breast or thighs
For the sauce
- 4 ½ tablespoon peanut butter
- 2 tablespoon water
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 1 teaspoon tamarind concentrate
- 1 teaspoon fish sauce
- 1 clove garlic crushed/grated
Instructions
- Mix together marinade ingredients in a container big enough for your chicken.
- Cut chicken into around 1in chunks, across the grain as far as possible, and toss in marinade. Leave to marinate in the fridge for at least an hour, 3-4 if you have it.
- Mix together the sauce ingredients and set aside until ready.
- Thread the marinated chicken on to skewers and grill on the BBQ or under a broiler/grill until lightly charred and chicken is cooked through, around 15mins although it will depend on your grill and size of chicken pieces.
Notes
- Marinate the chicken for at least 1 hour; 3-4 hours is recommended for best flavor.
- Cooking time around 15 minutes can vary based on grill and chicken piece size.
