Chicken satay with peanut sauce

Chicken satay marinated in a blend of lemongrass, soy sauce, brown sugar, fish sauce, ginger, lime juice, garlic, turmeric, and cayenne develops a fragrant and flavorful profile. Grilled on skewers until lightly charred, the chicken is served with a creamy peanut sauce made from peanut butter, water, sugar, sesame oil, tamarind concentrate, fish sauce, and garlic. This balance of spices and richness makes it suitable for grilling and serving as a main dish or appetizer.

Description

This Chicken satay uses a marinade rich in Southeast Asian flavors including lemongrass and turmeric, imparting bright, aromatic notes along with a touch of heat from cayenne pepper. The meat is cut into chunks and allowed to soak in this marinade for at least an hour, enabling the flavors to deepen and tenderize the chicken.

The peanut sauce complements the grilled chicken with its blend of creamy peanut butter, savory fish sauce, tangy tamarind, and toasted sesame oil, balancing the marinade's spice with sweetness and acidity. Grilling the skewered chicken produces lightly charred edges and a juicy interior.

Chicken satay is served warm off the grill, making it well suited for casual gatherings or as part of a larger meal. The peanut sauce's texture and flavor contrast enhance the meat’s spices. Allowing sufficient marination time enhances the final taste significantly.

  3. Mix together the sauce ingredients and set aside until ready.
  4. Thread the marinated chicken on to skewers and grill on the BBQ or under a broiler/grill until lightly charred and chicken is cooked through, around 15mins although it will depend on your grill and size of chicken pieces.

Notes

  • Marinate the chicken for at least 1 hour; 3-4 hours is recommended for best flavor.
  • Cooking time around 15 minutes can vary based on grill and chicken piece size.
