Chicken Sausage White Bean Skillet

This Chicken Sausage White Bean Skillet combines browned chicken sausage medallions with sautéed onions, garlic, cannellini beans, and wilted spinach, all simmered in chicken broth and seasoned with oregano, smoked paprika, salt, and black pepper. The dish features tender sausage and creamy beans in a flavorful broth-like sauce with a hint of smokiness from the paprika. It’s a convenient one-pan meal with a balance of protein, greens, and legumes, making it suitable for a satisfying, hearty dinner or lunch.

Description

Chicken Sausage White Bean Skillet uses fully cooked chicken sausage sliced into medallions and browned briefly to develop color and flavor. The sausage is removed to let onions and garlic soften in the remaining skillet oil, creating a base for the dish. Canned cannellini beans add a creamy texture without rinsing to keep some starchy liquid for the sauce. Dried oregano and smoked paprika introduce aromatic and smoky notes complemented by salt and cracked black pepper. A splash of chicken broth simmers the mixture to meld flavors and finish cooking.

Spinach is stirred in last to wilt gently with residual heat, offering bright color and a fresh contrast to the rich beans and sausage. This one-pan dish serves as a balanced meal combining protein, legumes, and greens. It can be enjoyed directly from the skillet, suitable for a quick weeknight dinner or a meal prep option.

The recipe advises adjusting the sauce consistency by adding a bit of water if too thick when adding spinach, providing ease for home cooks to achieve desired texture. The seasoning is moderate, highlighting the natural flavors of the ingredients without overwhelming spice.

Ingredients

Servings
  • 4 chicken sausage $4.99, fully cooked, about 12 oz., links
  • 2 Tbsp cooking oil $0.08, divided
  • 1 yellow onion $0.42, small, diced
  • 2 garlic $0.16, cloves, minced
  • 2 oz. cannellini beans $2.00, drained
  • 1/2 tsp salt $0.02
  • 1/2 tsp oregano $0.05, dried
  • 1/4 tsp smoked paprika $0.02
  • 1/4 tsp black pepper $0.02, freshly cracked
  • 1 cup chicken broth $0.17
  • 2 cups spinach $0.76, roughly chopped

Instructions

  1. Slice the chicken sausage into round medallions about ¼ - ½ inch thick.
  2. Heat a large skillet over medium heat and add 1 Tbsp of oil. Add the sliced chicken sausage to the skillet and brown on both sides. It will only take about 1-2 minutes on each side. So be careful not to burn the sausage. Once the chicken sausage is browned, remove it from the skillet onto a separate plate and set aside.
  3. In the same skillet, add the remaining 1 Tbsp of oil along with the diced onion and minced garlic. Sauté for about 3 minutes or until the onion is translucent and the garlic is fragrant.
  4. Add the drained canned beans to the skillet (do not rinse the beans, the residual starchy liquid helps create the sauce), along with the salt, dried oregano, smoked paprika, and cracked black pepper. Then pour in the chicken broth.
  5. Gently stir everything together and bring the skillet up to a simmer. Simmer for 4-5 minutes.
  6. Add the chopped spinach to the skillet, allowing the heat to wilt the spinach, then add the browned chicken sausage. Gently stir with the beans to combine.
  7. Serve hot with crusty bread and some freshly cracked black pepper or red pepper flakes on top. Enjoy!

Notes

  • If the skillet's sauce thickens too much, add 2 tablespoons of water when adding the spinach to loosen it.
