Chicken Scampi Recipe sounds fancy but it is really so simple to prepare. Skip the restaurant and make this delicious meal at home with very little work.

Ingredients

  • 3 chicken breast sliced, boneless, skinless
  • ½ red onion sliced
  • ½ red bell pepper sliced
  • ½ green bell pepper any color will do actually -the more the merrier, sliced
  • 2 cups chicken broth
  • 1 Tablespoon Italian seasoning
  • 1 teaspoon garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 16 oz angel hair pasta
  • 1 cup Parmesan Cheese

Instructions

  1. Start a pot of water on the stove for your pasta. In a big skillet, drizzle a small amount of olive oil.
  2. Slice chicken breast and place in skillet. Cook on med-high heat until it begins to brown good. Toss in onions and peppers and cook for about 2-3 minutes.
  3. Toss in the seasonings. Stir.
  4. Then add 2 cups of chicken broth. Stir. Bring to a boil. Then cover and reduce heat.
  5. Place your pasta in the other pot that is now boiling. Once your pasta is finished cooking, your chicken will be done too!
  6. Drain pasta. Mix in a handful of the cheese in with the chicken mixture. You can either toss it all with the pasta in the same pan, or keep it separate until it goes on your plate. Season with salt and pepper.
