Description
Chicken Shish Kebabs feature boneless, skinless chicken thigh pieces coated in a flavorful marinade combining Greek yogurt with smoked paprika, cumin, cinnamon, chili flakes, lemon juice, and garlic. This marinade imparts warmth, subtle heat, and tang, while the yogurt helps tenderize the meat. After marinating, the chicken is threaded onto skewers and cooked over a grill or barbecue until the exterior is charred and the interior fully cooked. The grilling develops smoky notes and seals in the juiciness.
When served, the kebabs are complemented well by flatbreads or pittas, with crisp lettuce, creamy tzatziki, sharp onions, and sweet-tart pomegranate seeds adding fresh contrast and textural variety. The dish balances spice and acidity with the richness of the grilled meat and yogurt marinade.
For variation, vegetables like onions, peppers, or mushrooms can be alternated on the skewers to stretch the meat quantity and add flavor complexity. The kebabs can be marinated for as little as two hours or up to 24 hours for deeper flavor. They can also be frozen for future use.
Ingredients
Chicken Shish Kebabs
- 125 g Greek yogurt
- 3 teaspoons smoked paprika
- 1 teaspoon cumin ground
- ½ teaspoon cinnamon
- 1 teaspoon chili flakes more if you like things hot!
- lemon juice of 1
- 3 cloves garlic crushed or grated
- salt
- black pepper
- 800 g chicken thigh cut into bitesize pieces, skinless, boneless, or breast
- 4 metal skewers (if you use wooden ones remember to soak in water first)
To serve
- flatbreads your choice to serve
- Pittas
- lettuce
- tzatziki
- onions
- pomegranate seeds
Instructions
- Mix together the yogurt, spices, chilli flakes, lemon juice, garlic, salt and pepper. Add the diced chicken and turn to coat thoroughly. Ideally marinate for 2 hours or up to 24 hours (covered in the fridge). But if you haven’t got time just carry on with the recipe.
- Prepare the barbecue or heat the grill (broiler).
- Thread the chicken onto the skewers.
- Cook the chicken for 10 minutes or until the chicken is cooked through in the middle and charred in places on the outside. Turn the kebabs a few times on the BBQ or under the grill to get the kebabs evenly cooked.
- Serve with flatbreads, pittas, lettuce, tzatziki, onions and pomegranate seeds – or whatever you like!
Notes
- For fuller skewers, alternate chicken pieces with vegetables such as onions, peppers, or mushrooms.
- You can freeze the marinated skewers before cooking to save for a later meal.
