Description
This Chicken Souvlaki recipe uses cubed chicken breast marinated in a mixture of olive oil, lemon juice, red wine vinegar, finely minced garlic, oregano, thyme, parsley, salt, black pepper, and optional chili flakes. The marinade tenderizes the chicken and infuses it with citrus and herb notes. The chicken is marinated for at least one hour and up to six hours, then threaded onto skewers and grilled over medium-high heat until cooked through, about 10 minutes, with occasional turning. Ingredients
- 1.5-2 lbs chicken breast cut into 1" cubes, boneless, skinless
- wooden skewers (soaked in water for 30 minutes before use, or metal skewers)
Marinade
- ½ cup olive oil (or neutral oil of choice)
- ½ cup lemon juice
- 1 tablespoon red wine vinegar
- 5 garlic finely minced, cloves
- 1 tablespoon oregano
- ½ teaspoon thyme
- ½ teaspoon parsley dried
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon chili flakes (optional)
For Serving
- tzatziki sauce
- roasted potatoes Greek style
- yellow rice
- Greek salad
- pita bread
Instructions
- Mix all of the marinade ingredients together in a small bowl.
- Place chicken cubes in a Ziploc bag and pour in the marinade. Seal the bag and toss to coat evenly with the marinade, then open the bag and reseal, removing as much air as possible. Place the chicken in the refrigerator for at least 1 hour to 6 hours (Note: do not marinate overnight).
- Thread the meat onto the skewers. Heat your BBQ to medium-high.
- Grill over medium-high heat for about 10 minutes, turning occasionally until they are cooked through (internal temperature 165ºF).
- Serve and enjoy! Optional serve with Greek Salad, Tzatziki, Yellow Rice, Greek Roasted Potatoes, and Pita Bread.
