Description
The chicken pieces are marinated in a blend of Greek yogurt, fresh lemon juice, dried oregano, garlic powder, salt, and black pepper. The yogurt tenderizes the chicken while the lemon and oregano add bright, herbaceous flavors characteristic of Greek cuisine. After refrigerating the chicken in this marinade for thirty minutes, the meat is threaded onto skewers along with pieces of red bell pepper and red onion, which also slightly soften and char during cooking.
The skewers can be grilled over medium-high heat for 6 to 8 minutes per side, or baked in the oven on a foil-lined baking sheet with a cooling rack at 425°F for 25-30 minutes. The result is juicy chicken with hints of tanginess and herb fragrance complemented by the sweetness of the peppers and onions.

Ingredients
- 1 1/2 lbs chicken breast cut into chunks, skinless, boneless
- 1/2 cup Greek yogurt
- 1/4 cup lemon juice fresh

- In a small bowl, mix together the greek yogurt, lemon juice, oregano, garlic powder, salt, and pepper. Add the chicken chunks to a ziplock bag and pour the yogurt mixture over the top. Seal the bag and toss to coat. Refrigerate for thirty minutes.
- Thread the marinated chicken chunks onto skewers, alternating with chunks of red pepper and red onion.
- Grill on medium high heat for 6 to 8 minutes per side, until juices run clear. Alternatively, line a baking sheet with foil and place a cooling rack on top. Place the skewers on the cooling rack, and bake at 425 for 25-30 minutes.
