Chicken Spiedini Recipe

Chicken Spiedini involves marinating chicken breast cubes in olive oil, white wine, lemon juice, and garlic, then coating them with a breadcrumb and Parmesan mixture before grilling or baking. The resulting skewers offer a flavorful, crisp exterior with a juicy interior. The marinade infuses the meat with tang and garlic aroma, while the breading adds texture and a savory note.

Description

This recipe begins by marinating cubed chicken breasts in a blend of olive oil, white wine, lemon juice, garlic slices, salt, and pepper, allowing the flavors to penetrate the meat over a few hours. The marinated chicken pieces are then coated in a mixture of unseasoned Italian bread crumbs, freshly grated Parmesan, salt, pepper, and fresh parsley, which crisps up during cooking.

Chicken pieces are threaded onto skewers and grilled over medium-high heat, turning to evenly brown and cook through. The chicken is cooked until it reaches an internal temperature of 165°F, ensuring safe consumption while retaining juiciness. The Parmesan in the breading adds subtle richness and a golden color.

For an alternative method, the breaded chicken can be baked in a 400°F oven until golden and cooked through, turning halfway for even cooking. Serving these skewers suits casual meals, appetizers, or pairing with simple salads or grain sides.

Ingredients

Servings

For the Chicken and Marinade:

  • 2 pounds chicken breast cut into 1-inch cubes
  • ½ cup extra virgin olive oil
  • ½ cup dry white wine wine is optional, but enhances flavor you can use chicken broth, such as sauvignon blanc
  • lemon juice of 1
  • 3 cloves garlic sliced
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Breading:

  • 1 cup Italian bread crumbs unseasoned
  • ½ cup Parmigiano Cheese freshly grated, or parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup parsley minced, fresh

For the Lemon Butter Sauce:

  • ½ cup butter
  • lemon juice and zest of 1/2
  • 1 clove garlic minced
  • ½ teaspoon salt
  • 1 teaspoon rosemary chopped, fresh
  • ¼ teaspoon red pepper flakes

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, white wine, lemon juice, sliced garlic, salt, and pepper. Add the pieces of chicken to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor. If you are using wooden skewers, soak them in water while the chicken marinades.
  2. Prepare the Breading: In a mixing bowl, combine Italian bread crumbs, grated Parmigiano, salt, pepper, and minced parsley. After marinating, drain the chicken and discard the marinade. Dredge each piece of chicken in the breadcrumb mixture until well-coated.
  3. Grill* the Chicken: Preheat your grill to medium-high heat. Thread the breaded chicken cubes onto wooden or metal  skewers. Place the chicken skewers on the hot grill for about 10-12 minutes, turning occasionally, until golden brown and cooked through. Chicken is cooked when the internal temperature reaches 165°F (74°C). Use a meat thermometer to check for doneness to prevent overcooking, which can dry out the chicken.
  4. Make the Lemon Butter Sauce: In a small saucepan, melt the butter over medium heat. Add the lemon juice, lemon zest, minced garlic, salt, rosemary, and red pepper flakes. Simmer for about 5 minutes, or until the sauce is aromatic and slightly reduced.
  5. Serve: Arrange the grilled chicken spiedini on a platter. Drizzle generously with the warm lemon butter sauce. Garnish with extra minced parsley and lemon slices for an added touch of freshness.

Notes

  • Marinate chicken for at least 2 hours or overnight for deeper flavor infusion.
  • Soak wooden skewers in water during marinating to prevent burning during grilling.
  • Bake in a 400°F oven for 20-25 minutes, turning halfway, as an alternative to grilling.
  • Use a meat thermometer to ensure chicken reaches 165°F internally for safe eating.
