Chicken Spiedini Recipe with Amogio Sauce

Chicken Spiedini are chicken cubes marinated with lemon, herbs, and white wine, then coated with a crispy blend of panko breadcrumbs and Parmesan cheese before grilling. This preparation creates skewers with a flavorful, herb-infused crust and tender interior. The accompanying Amogio sauce combines garlic, lemon juice, fresh herbs, and a butter-olive oil mixture for a bright and rich complement. These skewers are suitable for grilling enthusiasts looking to add an Italian-inspired twist to their chicken dishes.

Description

Chicken Spiedini Recipe with Amogio Sauce features boneless, skinless chicken breast cubes marinated in olive oil, white wine or broth, rosemary, oregano, lemon zest, salt, and pepper, infusing them with herbal and citrus notes. After marinating, the chicken is coated evenly in a mixture of panko breadcrumbs and Parmesan cheese, giving it a crisp exterior when grilled. The skewers are cooked on a medium-high grill pan until they reach the safe internal temperature of 165℉, ensuring juicy yet fully cooked chicken.

The Amogio sauce served alongside is prepared by gently simmering olive oil, butter, garlic, fresh lemon juice, chopped parsley and basil, with salt, pepper, and optional red pepper flakes. This sauce brings a zesty, herbaceous warmth that balances the crunchy, savory chicken. Together, they offer a harmonious combination of textures and flavors.

These chicken skewers pair well with grilled vegetables or a simple salad, functioning as a flavorful main course for a grilled meal. The recipe also notes practical storage advice, recommending refrigeration up to three days or freezing for up to three months to preserve freshness.

Ingredients

Servings

For the Chicken Skewers

  • 2 pounds chicken breast cut into 1-inch cubes, boneless, skinless
  • cup olive oil
  • ¼ cup white wine or chicken broth (optional)
  • 2 tablespoons rosemary finely chopped fresh
  • 1 tablespoon oregano dried
  • 1 tablespoon lemon from 1 lemon, zest
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper ground
  • ¾ cup panko breadcrumbs
  • cup Parmesan Cheese freshly grated

For the Amogio Sauce

  • ½ cup olive oil
  • ¼ cup butter ½ stick, unsalted
  • 3 cloves garlic minced
  • ¼ cup lemon juice from 1½ lemons, fresh
  • 1 tablespoon parsley chopped, fresh
  • 1 tablespoon basil chopped, fresh
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper ground
  • 1 pinch red pepper flakes optional

Instructions

  1. In a large bowl, toss together the chicken, olive oil, wine, rosemary, oregano, lemon zest, salt and pepper. Place in the fridge to marinate for 20-30 minutes.
  2. Once marinated, toss in the breadcrumbs and parmesan cheese until well coated. Skewer the chicken onto bamboo or metal skewers and set aside.
  3. Heat your grill pan over medium-high heat until warm. Brush on some oil to prevent the skewers from sticking. Grill the skewers for 4 minutes on each side until the internal temperature reaches 165℉.
  4. While the chicken is cooking, add all the amogio sauce ingredients to a medium saucepan. Simmer, then remove from heat. Serve alongside the skewers.

Notes

  • Marinate the chicken for 20-30 minutes to allow flavors to penetrate the meat.
  • Ensure skewers are well coated with the breadcrumb and Parmesan mixture for a crispy crust.
  • Grill the skewers until the internal temperature reaches 165°F to ensure safety.
  • Store leftovers in an airtight container refrigerated up to 3 days or freeze for up to 3 months.
