  • ½ cup panko breadcrumbs
  • ¼ cup milk
  • 1 pound ground chicken
  • 1 egg
  • 2 tablespoons chopped fresh parsley divided
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons butter
  • cup all-purpose flour
  • cups beef broth
  • cup heavy cream

Instructions

  1. Combine the panko breadcrumbs and milk in a large bowl. Let the mixture sit for a few minutes until the breadcrumbs are completely saturated. 
  2. Add the ground chicken, egg, parsley, garlic powder, onion powder, salt and pepper to the same bowl and mix until combined.
  3. Use a cookie scoop to portion out the mixture into meatballs, about 1 ½ to 2 tablespoons each. Roll into balls and place on a baking sheet.
  4. Heat 1 tablespoon of butter in a large skillet over medium heat. Brown the meatballs on all sides. Then, transfer to a plate. 
  5. Melt the remaining butter in the same sauté pan. Whisk in the flour. Then, pour in the beef broth while whisking to combine. Simmer until slightly thickened. Then, stir in the heavy cream. Season to taste with salt and pepper. 
  6. Add the meatballs to the pan. Cover and simmer on low for 8-10 minutes until the meatballs are tender and cooked through. If needed, stir in more broth to thin out the sauce.
  7. Sprinkle with fresh parsley. Serve with mashed potatoes or egg noodles and lingonberry jam on the side.
