Chicken Thigh Marinade
Description
The marinade blends salty soy and Worcestershire with sweet honey and bright lemon juice. Aromatic herbs oregano and rosemary add herbal notes, while garlic salt seasons the mix. Chicken thighs are soaked in this mixture for at least 2–3 hours or ideally overnight to develop flavor without turning tough.
Grilling over medium-high heat cooks the thighs evenly, producing a nicely charred exterior and moist interior. An oven-roasted alternative bakes the thighs at 425°F until the internal temperature reaches 165°F, ensuring safe cooking with retained juiciness.
This versatile marinade allows some ingredient swapping, such as using garlic powder and extra salt if garlic salt is unavailable, or substituting herbs and sweeteners. It accommodates smaller portions by halving ingredients and adjusting cooking time accordingly.
Ingredients
CHICKEN THIGH MARINADE
- ¼ cup soy sauce less-sodium
- ¼ cup olive oil
- 2 tablespoons Worcestershire sauce
- 1 tablespoon honey
- lemon juice of 1
- 2 tablespoons oregano fresh chopped or 2 teaspoons dried
- 2 tablespoons rosemary fresh chopped or 2 teaspoons dried
- 1 teaspoon garlic salt
CHICKEN
- 2 lbs. chicken thighs boneless, skinless
- kosher salt to taste
- ground black pepper to taste
Instructions
MAKE THE CHICKEN THIGH MARINADE
- In a large measuring cup or in a jar with a lid, whisk (or shake) together all of the marinade ingredients until completely combined.
MARINATE THE CHICKEN
- Place chicken thighs in a large Ziploc bag or bowl. Pour the marinade in the bag with the chicken. Seal the top of the bag and place chicken in the refrigerator to marinate for at least 2-3 hours (or overnight is even better). Remove chicken from the bag or bowl and discard the marinade.
GRILL THE CHICKEN THIGHS
- Preheat your grill to medium-high heat (about 400-450°F). Place the chicken thighs directly on grill grates and grill for approximately 6-7 minutes per side, or until the internal temperature in the thickest part of the thigh reads 165°F.
ALTERNATE OVEN-ROASTED METHOD
- Preheat the oven to 425°F. Place the chicken thighs on a rimmed baking sheet lined with foil or in a greased baking dish. Bake until the internal temperature in the thickest part of the thigh reads 165°F, about 20 minutes.
Notes
- Marinate chicken thighs for at least 2-3 hours, preferably overnight, for maximum flavor and tenderness.
- If garlic salt isn’t available, use garlic powder plus salt to taste.
- Herbs can be substituted (e.g., parsley for oregano or thyme for rosemary) and honey can be replaced with brown sugar.
- Adjust marinade quantity when cooking smaller portions, such as 1 pound of chicken thighs.
