Chicken Tikka Masala

Ingredients (for 4 persons)

For the marinade

  • lb chicken thighs (deboned), cubed
  • 3 tablespoons lemon juice
  • 6 cloves garlic
  • 1 (2 inches / 5 cm) piece ginger fresh
  • 2 teaspoons cumin seeds
  • ½ teaspoon ground coriander
  • ½ teaspoon garam masala
  • 1 tablespoon paprika
  • 1 teaspoon chili powder
  • 3 tablespoons yogurt
  • 2 tablespoons vegetable oil
  • salt

For the chicken and the sauce

  • 3 tablespoons vegetable oil
  • 1 large onion , chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon Turmeric ground
  • 2 teaspoons ground coriander
  • 1 tablespoon paprika
  • 1 teaspoon chili powder
  • 1 tablespoon tomato paste
  • 2 large tomato peeled, seeded and chopped
  • 1 teaspoon lemon juice
  • ¾ cup heavy cream
  • ¼ teaspoon garam masala
  • 2 tablespoons cilantro chopped
  • salt
  • water

Instructions

  1. Place the chicken pieces in a large bowl and season with salt.
  2. Rub them by hand with the lemon juice.
  3. Cover with plastic wrap and marinate for 15 minutes in the refrigerator.
  4. Meanwhile, place the garlic, ginger, cumin, cilantro, garam masala, chili powder and yogurt in a blender.
  5. Blend until smooth. Add this mixed mixture to the chicken. Add the oil and mix well.
  6. Cover with plastic wrap and marinate for 6 hours in the refrigerator.
  7. Preheat a BBQ grill.
  8. Thread the marinated chicken pieces on skewers.
  9. Grill the chicken, turning occasionally, for 15 minutes or until cooked through.
  10. Remove the chicken from the skewers. Set aside.

Sauce

  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion.
  3. Sauté for 2 to 3 minutes, stirring, or until lightly browned.
  4. Add the ginger paste.
  5. Sauté for 2 minutes, stirring continuously.
  6. Add the turmeric, ground coriander, paprika and red pepper powder.
  7. Sauté for 1 minute. Add the tomato paste and sauté for a few seconds. Add the chopped tomatoes. Sauté until mixture is tender.
  8. Lower the heat and simmer for 2 minutes.
  9. Add the lemon juice and cream. Add enough water to make a thick sauce. Season with salt.
  10. Simmer, stirring occasionally, for 3 to 4 minutes. Add more water if needed.
  11. Add the garam masala and half the cilantro.
  12. Stir in the grilled chicken.
  13. Garnish with the remaining cilantro leaves.
  14. Serve with naan, roti and/or rice.
