Chicken Tikka Skewers feature chicken breast pieces marinated in a yogurt-based blend with a mix of traditional tikka spices including paprika, cumin, and garam masala. Skewers:

  • 600 g chicken breast cut in to chunks
  • 1 red onion cut in to chunks
  • 1 yellow bell pepper cut in to chunks
  • 0.5 lemon (juice only)
  • 4 tablespoon Greek yogurt 0% fat free

Tikka spice blend:

  • 1 pinch sea salt
  • 1 pinch black pepper
  • 2 teaspoon paprika
  • 1 teaspoon cumin ground
  • 2 teaspoon garam masala
  • 1 teaspoon garlic powder
  • 1 teaspoon Turmeric ground
  • 1 teaspoon onion powder
  • 1 teaspoon chilli powder mild

To serve:

  • mango chutney
  • Raita

Instructions

  1. Put the chunks 600 g Chicken breast into a large bowl.
  2. In a separate bowl, mix together 1 pinch Sea salt and ground black pepper,2 teaspoon Paprika,1 teaspoon Ground cumin,2 teaspoon Garam masala,1 teaspoon Garlic powder,1 teaspoon Ground turmeric,1 teaspoon Onion powder and 1 teaspoon Mild chilli powder.
  3. Add 4 tablespoon 0% Fat Free Greek yogurt, tikka seasoning and juice of 0.5 Lemon to the chicken.
  4. Mix well, cover and put in the fridge for at least 30 minutes.
  5. Soak 8 wooden or bamboo skewers in cold water for 30 minutes.
  6. When the chicken has marinated, remove from the fridge. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6. Thread the chicken on to the skewers along with some chunks of 1 Red onion and 1 Yellow bell pepper.
  7. Place the kebabs on to a rack and put in the oven for 20 minutes, turning halfway through.
  8. Transfer to under the grill (broiler) at a medium heat for 10 minutes, turning after 5 minutes.
  9. Serve with a salad, Raita and some Mango chutney (all optional).

Notes

  • Marinate chicken for at least 30 minutes, preferably up to 4 hours, to enhance flavors.
  • Soak wooden skewers in water for 30 minutes before use to prevent burning while cooking.
  • Cut chicken into similarly sized chunks so they cook evenly on the skewers.
  • Do not overcrowd the skewers; pieces should be touching lightly but not squashed together.
  • Increase chili powder in the seasoning for a spicier result.
  • Optional additions include paneer cubes or crushed garlic for extra flavor in the marinade.
  • This recipe can be adapted for cooking in an Air Fryer if preferred.
  • Store leftovers refrigerated and consume within a few days.
