Chicken Wild Rice Soup (no cream)

Chicken Wild Rice Soup (no cream) is a hearty, broth-based soup with chunks of cooked chicken, wild rice, vegetables like carrots, celery, cabbage, bell pepper, and mushrooms, seasoned with poultry spices. This recipe omits cream, resulting in a lighter but still flavorful soup featuring tender vegetables and tender wild rice that cooks directly in the broth.

Description

This Chicken Wild Rice Soup combines cooked chicken and wild rice with a medley of vegetables including carrots, celery, cabbage, red bell pepper, and mushrooms in a chicken broth base. The soup is seasoned with poultry seasoning for added depth and uses olive oil to sauté the aromatics and vegetables. Flour is added early to slightly thicken the base without cream.

The vegetables are sautéed until slightly softened and then simmered with broth and chicken for 15 minutes. Wild rice is added last and cooked uncovered for 35-40 minutes until tender and cooked through. The method results in a rich broth with tender bits of chicken and a balanced mix of flavors and textures from the vegetables and rice.

Without cream, the soup remains lighter but still comforting. It can be served warm as a nourishing main or starter, pairing well with bread or crackers on the side. The use of wild rice adds a chewy texture distinct from regular rice varieties, complementing the tender vegetables and chicken.
