Chickpea Tacos
Description
The recipe involves roasting seasoned chickpeas at high heat until their edges turn golden and crispy, offering a contrast to their tender center. The chipotle sauce combines plain yogurt, chipotle paste, and fresh lime juice to add a smoky, slightly spicy, and tangy layer. Serving the tacos with mashed avocado and fresh vegetables adds creaminess, freshness, and brightness.
These tacos can be assembled quickly once the chickpeas are roasted and sauce prepared, making them suitable for a casual meal. The mix of roasted chickpeas and vibrant toppings delivers a textural variety from crunchy to creamy. The inclusion of pickled jalapeños provides additional piquancy for those who enjoy heat.
To best enjoy, warm the tortillas before assembling and finish tacos with a squeeze of fresh lime. The chipotle sauce can be made ahead and adjusted for spice and acidity according to taste.
Ensure chickpeas are well drained and patted dry before roasting to maximize crispiness. Monitor chickpeas during roasting to prevent burning as they brown quickly.
