  • 1 lb chicken thighs boneless skinless
  • 8 corn tortillas
  • 1 cup Pico de Gallo homemade or store bought
  • 1 cup guacamole

chili lime chicken marinade

  • ¼ cup olive oil
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ¼ tsp red pepper flakes
  • 1 tsp kosher salt
  • black pepper to taste
  • lime zest
  • 1/4 cup lime juice about 1 large lime, fresh
  • 4 garlic cloves, minced

Instructions

  1. Whisk together all ingredients for marinade. Add chicken thighs and toss to make sure each piece is fully coated in the marinade. Marinate for 30 minutes in the refrigerator.
  2. When ready to bake chicken, preheat oven to 425 degrees. Line a baking sheet with foil for easy cleanup.
  3. Bake chicken until cooked through, about 20 minutes. When cooked, place under broiler for 1-2 minutes to char the edges (optional).
  4. Remove chicken and allow to rest for at least 5 minutes, then slice.
