Ingredients

Servings
  • 2 lbs chicken breast sliced into thin cutlets
  • 2 tbsp ranch seasoning (1 packet)
  • 2 tbsp lime juice (juice from 1/2 lime)
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 3 tbsp vegetable oil

Instructions

  1. Combine the ranch seasoning, lime juice, chili powder, smoked paprika, salt and 2 tbsp oil to make the marinade.
  2. Place chicken breast in a container or zip top bag and cover with the marinade on all sides. Let rest 30 minutes in the refrigerator.
  3. Heat the remaining 1 tbsp oil in a large skillet over medium high heat. Place chicken in the hot pan and sear on each side for 2 minutes. Then cover the pan and reduce heat to low cooking for 4-8 more minutes or until the chicken breasts are cooked through to 160˚F
  4. Remove the chicken from the pan and let rest 3 minutes. Then serve hot! Enjoy!
