  • 8 ounces cheddar cheese shredded
  • 8 ounces Monterey jack cheese shredded
  • 2 tablespoons butter
  • 1 ounce whole chilies canned
  • 2 cups milk
  • 3 egg
  • 1 cup Bisquick baking mix
  • 1 ounce diced chilies canned

Instructions

  1. Preheat oven to 325 degrees
  2. Combine Cheeses in a bowl.
  3. Melt butter in a 13 x 9-inch casserole dish. You can do this by placing the butter into the baking dish while the oven is preheating.
  4. Lay whole chilies on the melted butter, covering the bottom of the dish. Sprinkle 2/3 of the cheese on chilies.
  5. Mix the milk, eggs, Bisquick until smooth. Add diced chilies and pour the mixture over the cheese. Top with remainder of cheese. Bake for 45 minutes.
