Chili Relleno Casserole with Beef

This Chili Relleno Casserole with Beef layers whole chilies, browned ground beef, a creamy egg and milk mixture, and shredded cheddar cheese baked until set and golden. The casserole delivers a comforting texture with savory beef and the mild heat and flavor of whole chilies, all held together by the custard-like batter. It offers a satisfying, layered dish that can be served as a hearty main meal.

Description

The dish is prepared by first beating together milk, flour, eggs, salt, and black pepper to create a liquid base that will set into a custard during baking. In a casserole dish, whole canned chilies are layered with cooked ground beef followed by the liquid mixture and a generous topping of shredded cheddar cheese. These layers are repeated until ingredients are used up.

Baking at 350°F for 50 minutes cooks the layers through and melts the cheese, resulting in a casserole with some crispness on top and tender chilies and beef inside. The flavor is mildly spicy from the chilies and rich from the cheese and beef combination. Texturally, it balances the softness of baked eggs with the meatiness of the beef and the slight firmness of chilies.

This casserole works well as a standalone main dish and can be served with a side salad or tortillas to make a full meal. It’s versatile as the ground beef can be omitted to prepare a vegetarian version if desired.
