Ingredients

Servings

For the Chimichurri Sauce

  • 1/2 cup flatleaf parsley
  • 1/2 cup fresh cilantro
  • 1 shallot roughly chopped
  • 1 Jalapeño seeded and finely chopped
  • 4 cloves garlic minced
  • 1/2 cup white vinegar or fresh lime juice
  • 1 Tbsp fresh oregano chopped
  • 2/3 cup olive oil
  • ¼ tsp black pepper
  • ¼ to 1/2 teaspoon red pepper flakes optional
  • 1 tsp sea salt to taste

Beef Sliders:

  • 1 pound ground beef
  • 3 Tbsp chimichurri sauce + more for serving
  • 6 to 8 slices pepper jack cheese
  • 1 to 2 large ripe avocado sliced
  • mixed greens
  • 10 slider buns toasted

Instructions

Prepare the Chimichurri Sauce

  1. Add all ingredients except for oil to a blender or food processor. Blend on a low speed to chop the ingredients.
  2. Slowly add the oil while the machine is on. Continue blending until the sauce reaches your desired consistency.
  3. Pour chimichurri sauce into a jar. Seal, refrigerate, and use for up to 1 week following preparation.

To Make the Chimichuri Beef Sliders

  1. Place the ground beef in a mixing bowl and add 3 tablespoons of chimichurri sauce. Season meat with sea salt and black pepper to your personal taste. Use your hands to massage the sauce and seasonings into the beef, making sure it is well distributed.
  2. Heat a cast iron skillet to medium-high. Form 10 small patties out of the beef and place them on the skillet. If you have a cookie scoop, you can use it to portion out the meat.
  3. Allow sliders to cook until juices seep out and the bottom firms up and appears crispy, about 2-3 minutes.
  4. Flip to the other side and cook an additional 30 seconds to 1 minute before adding the pepper jack cheese. Continue to cook to desired done-ness or until cheese is melted. I recommend cooking sliders to medium-rare for the tastiest result.
  5. Toast the slider buns in the oven cut-side up on the broil setting just until toasted. Spread butter over the buns if you'd like.
  6. Make sliders by compiling the mixed greens, slider patties, and avocado and drizzle chimichuri sauce on top!

Notes

  • For my gluten-free friends, choose gluten-free buns or go bun-less, which is what I do :)
