Description
This recipe involves seasoning salmon fillets with salt and pepper, then rubbing them with a cilantro-based chimichurri sauce made of herbs and oil. After a brief marinating period of 15-20 minutes, the fish is baked at 425°F until cooked through. For a crisp surface, a few minutes of broiling at the end caramelize the top.
The chimichurri provides a bright, aromatic contrast to the salmon's buttery texture. Baking preserves the moistness while allowing the flavors to meld.
Serving the salmon with additional chimichurri on top adds a fresh burst at the table and can complement side dishes such as rice, vegetables, or salads.
Ingredients
- 1 pound salmon about 4 fillets, skinless fillets
- 1/3 cup chimichurri plus a few extra tablespoons for serving!, with cilantro
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 425F.
- In a rimmed plate, season the salmon with salt and pepper on both sides.
- Then, add in the cilantro chimichurri, rub it on all sides, and let it marinate approximately 15-20 mins.
- Remove the fillets from the marinade, and arrange them on a cast iron braiser, or baking sheet.
- Bake for 15-20 minutes. Then, broil for 2-5 minutes if you like it crispier.
- Serve it with more chimichurri on top!
