Chinese 4-Ingredient Fried Cabbage

Chinese 4-Ingredient Fried Cabbage is a quick stir-fry combining cabbage with peanut oil, Sichuan peppercorns, dried chili peppers, salt, and soy sauce. The peppercorns are fried first to release their aroma, then removed before stir-frying the cabbage with chili. The result is a simple dish featuring lightly charred, tender cabbage with subtle heat and fragrant spice.

Description

This recipe uses a basic set of ingredients: cabbage, peanut oil, Sichuan peppercorns, dried chili peppers, salt, and soy sauce. The method begins by heating oil in a wok, frying the peppercorns until fragrant and dark, then removing them to infuse the oil with flavor without overpowering the dish. The cabbage and dried chili peppers are quickly stir-fried over high heat until the cabbage softens and the edges gain a slight char. Salt is added for seasoning, and finally soy sauce is drizzled to finish the dish with a salty umami note.

The cabbage is cooked so it retains some texture but is tender, while the dried chilies and peppercorns add a mild heat and aromatic buzz specific to Sichuan cuisine. This minimalistic stir-fry works well as a side dish to complement stronger-flavored mains or rice.

The recipe suggests grinding the cooled peppercorns for later use as a fragrant spice powder in marinades or sauces.

  • 1 1/2 tablespoon peanut oil (or vegetable oil)
  • 1 teaspoon Sichuan peppercorn
  • 2 dried chili peppers
  • 1/2 small head cabbage , chopped
  • 3/4 teaspoon salt
  • 1 teaspoon soy sauce (or tamari for gluten free)

Instructions

  2. Turn the heat back to medium high and add the chili peppers and cabbage. Immediately stir with spatula for 30 seconds. You should hear a vibrant sizzle. Add the salt. Keep stirring until the the edges are lightly charred and the leaves turn soft, 2 to 3 minutes.
  3. Turn to medium low heat, drizzle soy sauce over the cabbage and stir a few times to mix everything well.
  4. Serve warm.

Notes

  • After cooling, grind the Sichuan peppercorns in a coffee grinder and store the powder in an airtight container in the fridge.
  • The peppercorn powder can be used later to add fragrance to marinades or sauces like sesame noodles.
