Chinese Beef and Broccoli
Description
Chinese Beef and Broccoli involves slicing beef thinly and stir-frying it with garlic and ginger until just cooked. A sauce combining dark and light soy sauces, cornstarch, Chinese cooking wine, sugar, and spices is added to create a flavorful coating. Broccoli florets are simmered briefly in the sauce, absorbing its taste while retaining some bite.
The dish is typically served immediately over rice and can be garnished with sesame seeds for added texture and flavor contrast. The combination of tender beef, crisp broccoli, and richly spiced sauce makes it a versatile main dish.
Key tips include slicing the beef against the grain for tenderness and optionally parboiling the broccoli to control its doneness. Using dry sherry or sake can substitute the Chinese cooking wine if unavailable, and adjustments to soy sauce types will affect the sauce color and flavor intensity.
