This recipe focuses on preparing Chinese broccoli (gai lan) by soaking and thoroughly washing the stalks before boiling them in salted water with added vegetable oil. The oil helps retain the vegetable's vibrant green color. Boiling lasts only 2-3 minutes to keep the gai lan tender yet crisp. After draining, the sauce is made by mixing oyster sauce, soy sauce, brown sugar, and sesame oil, then quickly simmering it with garlic sautéed in additional vegetable oil to blend flavors.

Ingredients

  • 1.5 pounds Chinese broccoli Gai Lan
  • some water for boiling Chinese broccoli
  • ¼ teaspoon salt
  • 1 tablespoon vegetable oil ½ tablespoon add to water to boil gai lan and ½ tablespoon add to garlic
  • 4 cloves garlic
  • 1 tablespoon shallot for topping, fried

Sauce mixture:

  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1 tablespoon sesame oil

Instructions

  1. First, minced 4 garlic cloves and set them aside. 
  2. Next, soak 1.5 pounds kai lan in water for 15 minutes and wash them a few times. Then, boil a pot of water. Add ¼ teaspoon salt, ½ tablespoon vegetable oil and washed gai lan. After that, make sure kai lan is completely immersed in water and boil gai lan for 2-3 minutes.
  3. After, take them out and put them on a plate. 
  4. In a container, add 2 tablespoons oyster sauce, 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 teaspoon brown sugar and mix them well. 
  5.  Put ½ tablespoon vegetable oil into a pan and minced garlic. Then, stir fry them a little bit. 
  6. Pour the oyster mixture sauce and keep stirring the sauce and let it simmer for a minute. 
  7. When it is ready to serve, pour the sauce over and sprinkle 1 tablespoon fried shallots.

  • Boiling gai lan with salt and vegetable oil keeps the stems bright green and flavorful.
  • Ensure the Chinese broccoli is fully submerged in boiling water for even cooking, about 2-3 minutes to avoid overcooking.
  • Simmer the oyster sauce mixture with garlic for about one minute before pouring over the greens to allow flavors to meld.
  • Add fried shallots as garnish just before serving for added texture and taste contrast.
