Chinese Broccoli with Oyster Sauce
Description
This recipe focuses on preparing Chinese broccoli (gai lan) by soaking and thoroughly washing the stalks before boiling them in salted water with added vegetable oil. The oil helps retain the vegetable's vibrant green color. Boiling lasts only 2-3 minutes to keep the gai lan tender yet crisp. After draining, the sauce is made by mixing oyster sauce, soy sauce, brown sugar, and sesame oil, then quickly simmering it with garlic sautéed in additional vegetable oil to blend flavors.
The sauce is poured over the broccoli just before serving, and fried shallots are sprinkled on top for a crunchy, slightly sweet garnish that contrasts the tender greens. The combination balances the natural bitterness of gai lan with the savory and lightly sweet sauce.”
This dish suits as a side vegetable accompaniment to Asian-style meals, offering a straightforward way to enjoy Asian greens enhanced with an umami-rich sauce.
For best color, ensure the gai lan is fully submerged when boiling and avoid overcooking. Simmer the sauce briefly to meld flavors without losing its vibrancy.
