Chinese Chews

Chinese Chews are dense, chewy date bars featuring chopped pecans (or walnuts) that add crunch to a sturdy, cake-like base. They are baked in a square pan and dusted with powdered sugar, making a sweet treat with a firm texture that holds together well. The inclusion of chopped dates and nuts creates a rich, fruity, and nutty flavor profile, suited for snack time or alongside tea.

Description

Chinese Chews combine flour, sugar, baking powder, chopped dates, salt, and nuts with eggs to form a thick batter that is spread evenly in a greased pan and baked until set. The texture is firm but chewy, thanks to the chopped dates and nuts dispersed throughout. Once baked and cooled slightly, the bars are dusted with powdered sugar to add a gentle sweetness and attractive finish. This recipe requires thorough mixing due to its stiff dough, which can be facilitated by a stand mixer or food processor.

The date pieces add moist bursts within a sturdy crumb, while the pecans or walnuts contribute a toasty crunch. The lack of added fats or liquids aside from eggs results in a dense bite, making these bars suitable as a portable snack or lightly sweet dessert.

Storing them in an airtight container at room temperature preserves their texture for about a week, and freezing is an option for longer storage. Thaw overnight before serving, and add the powdered sugar then for best presentation.

Because of the stiff dough, mixing requires some effort; using a stand mixer or food processor can ease this.Store finished bars in an airtight container at room temperature for about one week. These bars freeze well for up to two months; thaw overnight in the refrigerator before dusting with powdered sugar and serving.
