Chinese chicken curry

Easy homemade easy Chinese chicken curry with potato and carrots. Another rice killer.

Ingredients

Servings
  • 1 chicken leg deboned and cut into large pieces
  • 1 potato diced
  • 1 carrot diced
  • 1/2 onion diced
  • 1 ginger minced, small piece
  • 1/2 curry paste block form
  • 2 tbsp. neutral cooking oil generic cooking oil
  • water
  • 1 tbsp. soy sauce
  • water 2 cm higher than the content, hot

Chicken Marinade:

  • 1 tbsp cooking wine
  • 1 tbsp soy sauce
  • 1 tbsp corn starch
  • 1 tbsp. vegetable oil for coating the chicken meat

Instructions

  1. Marinate the chicken: Toss chicken with the marinade ingredients and rest 10 minutes.
  2. Sauté aromatics: Heat oil in wok and cook onion, garlic, ginger until fragrant.
  3. Add vegetables: Add potato and carrot and stir fry briefly.
  4. Simmer curry: Add water to cover all the contents, then place in curry paste, soy sauce and bring to a simmer. Simmer for around 15 to 20 minutes until the sauce is slightly thickened.
  5. Sear chicken: Heat oil in skillet and pan-fry marinated chicken until browned.
  6. Simmer chicken in curry: Add seared chicken to the curry pot and cook for another 5 minutes.
  7. Serve over rice.
