Chinese Chicken Salad
Description
This salad combines finely shredded greens—Napa cabbage, romaine, and red cabbage—with thinly sliced cucumber and grated carrots, providing a refreshing, crisp base. Shredded cooked chicken adds protein, while mandarin oranges introduce a sweet citrus note. Toasted sliced almonds and crunchy chow mein noodles contribute nutty and crisp textures that contrast with the tender vegetables and fruit.
The dressing is a fusion of Asian-inspired flavors, mixing the acidity of rice wine vinegar and lemony sesame oil with sweet honey, spicy sriracha, soy sauce, and a hint of ground ginger. The balance of sweet, salty, spicy, and nutty makes the salad vibrant and complex in flavor. It should be well tossed just before serving so the vegetables are coated evenly but retain their crunch.
The salad works well as a light lunch or as a side dish complementing grilled or roasted dishes. Any leftover dressing can be refrigerated in a sealed container and remains good for a couple of weeks.
Ingredients
For the Dressing:
- ¼ cup rice wine vinegar found in most stores' Asian aisles, seasoned
- ½ tsp ground ginger
- 1 tsp sriracha
- 1 TB soy sauce or gluten-free Tamari, regular
- 2 TB honey pure
- 3 tsp granulated sugar
- 2 TB sesame oil caramel brown in color, Asian toasted
- ⅓ cup olive oil or canola oil
- garlic powder dash
- ¼ tsp kosher salt
- ½ tsp black pepper fresh ground
- 1 TB sesame seeds toasted
For the Salad:
- 4 cups Napa cabbage about 1/2 head, finely shredded
- 3 cups romaine lettuce finely shredded
- 1 cup red cabbage finely shredded
- cucumber thinly sliced, half of a large
- 2 carrot peeled and grated, large
- 2 cups rotisserie chicken or freshly cooked chicken breasts, shredded
- 15 oz mandarin orange drained
- ½ cup almonds toasted, sliced
- ½ cup Chow Mein noodles dried ramen noodles may be substituted, crispy
Instructions
- In a bowl, whisk together all dressing ingredients until well blended. Transfer to desired container and keep chilled.
- When ready to serve: In salad bowl, toss together Napa cabbage, Romaine lettuce, cucumber, carrots, and enough dressing to coat the veggies well.
- Gently toss in shredded chicken and mandarin oranges, sprinkling in more dressing as desired. Garnish top of salad with almonds and crispy noodles. Serve immediately.
Notes
- Keep unused dressing refrigerated in an airtight container for up to 2-3 weeks.
- Toss salad with dressing just before serving to maintain crisp texture.
