Chinese Garlic Sauce

Chinese garlic sauce is packed with flavors and has a perfect combination of salty, spicy, and slightly sweet flavors. This is an all-purpose stir-fry sauce that can be added to veggies, chicken, or shrimp. It can also serve as a dipping sauce for dumplings, egg rolls, and more.

  • 5 large cloves garlic minced
  • 2 teaspoons ginger minced
  • 1 tablespoon canola oil
  • ½ cup chicken stock or vegetable stock
  • 4 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon hot sauce
  • 2 teaspoons red chili flakes
  • 2 tablespoons brown sugar
  • 1 tablespoon green onion optional
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons cornstarch
  • ¼ cup water

Instructions

  1. Mix all the sauce ingredients in a bowl- chicken stock, low-sodium soy sauce, rice vinegar, chili sauce, red chili flakes, brown sugar, green onion (optional), and toasted sesame oil. Keep aside.
  2. In a saucepan heat canola oil. Sauté minced garlic and ginger in hot oil until fragrant, about 30 to 60 seconds.
  3. Pour the prepared sauce into the pan, and with constant stirring bring the sauce to a boil. Then let it simmer on low heat for another minute.
  4. Meanwhile, make cornstarch slurry by mixing water and cornstarch until no lumps are left.
  5. Pour the slurry into the sauce.
  6. Bring the mixture to a boil with constant stirring, and cook until the sauce is thickened.
  7. Use the sauce immediately in stir-fry recipes.
  8. To store the sauce, wait until the sauce is completely cooled, and then transfer it to an airtight glass jar and store it in the refrigerator.
