Description

The salad starts by frying thinly sliced wonton wrappers in hot canola oil until lightly browned and crispy, then draining them on paper towels. Romaine lettuce, shredded cooked chicken, toasted almond slices, cooked and cooled pasta, and optional chopped green onions are combined in a large bowl.

A dressing made from vegetable oil, seasoned rice vinegar, sesame oil, sugar, light soy sauce, sesame seeds, black pepper, and salt is whisked together and poured over the salad just before serving. The salad is then topped with the wonton strips and additional sesame seeds for crunch and flavor contrast.

  • 15 inch wonton wrappers sliced into 1/4 inch strips
  • 1/4 cup canola oil for frying
  • 4 cups romaine lettuce chopped
  • 1 chicken breast shredded
  • 2 green onions chopped (optional)
  • 1/4 cup almonds toasted lightly, sliced
  • 1 tbsp sesame seeds
  • 2 cups pasta cooked and cooled, noodles

Dressing

  • 1 1/2 tbsp vegetable oil
  • 6 tbsp seasoned rice vinegar
  • 1 tsp sesame oil
  • 1 1/2 tsp sugar
  • 2 tsp soy sauce light
  • 2 tbsp sesame seeds
  • 1/2 tsp black pepper ground
  • 1/8 tsp salt

Instructions

  1. Heat canola oil in a skillet over medium heat. When oil starts to shimmer, fry wonton skins in small batches for about 30 seconds or until they are lightly browned. Place on a paper towel to drain.
  2. Combine lettuce, chicken breast, almonds, pasta and green onions in a large bowl.
  3. Add dressing ingredients to a small bowl and whisk together. Pour over salad right before serving and top with wonton strips and sesame seeds. Serve immediately.
